Torta di Ricotta
For those of you that might have missed my last post, I made Homemade Ricotta Cheese for National Dairy Month, not that I need a reason to celebrate dairy, because pretty much every month is dairy month to me! The ricotta turned out better than I could ever have expected and was so easy to […]

Parsley Potatoes
Whenever possible, choose fresh parsley over the dried form of the herb since it is superior in flavor. Choose fresh parsley that is deep green in color and looks fresh and crisp. Read More >>

Father’s Day
Origin of Father’s Day… The campaign to celebrate the nation’s fathers did not meet with the same enthusiasm, perhaps because, as one florist explained, “fathers haven’t the same sentimental appeal that mothers have.” Read More >>

in the garden and June walkabout
There is something about this particular June that makes me look longingly up the hills and over the glistening, lapping pond and lake water. I know that feeling well, though it doesn’t announce itself every year. Walkabout. That desire to head up the hills and mountains, or even better, kayaking over Nubanusit Lake. To sit in the meadow and watch the fireflies and smell the scent of mint and lemon balm, wild carrot and daisies in the evening darkness. If I were on the Cap

Easy Summer Squash & White Bean Sauté
If you have as many (or more) tomato and summer squash plants as I have, you are going to need lots of recipe ideas come July. Currently, I have this going on in containers with three other tomato plants and a cucumber plant out in the yard… Here is an easy, weeknight recipe from Eating […]

What is your cooking style?
Yesterday as I was making Shepard’s pie, I took a moment to look at the state of my kitchen. I thought, these are the pics you don’t see on food blogs. Some people are very methodical and slow and peaceful when they cook. I love that. I want to be that. But in truth, I […]
Cook Eat Love
Hot Potato.
There are a lot of cultures out there that seem to have a terrible reputation when it comes to bad, bland food. The British, the Irish, the southern half of Central America, Canada, Utah, the middle part of Africa, most of the former U.S.S.R., Australia, Hawaii, etc… I call bullshit. Every single culture has something delicious to offer. Just because you travel somewhere and have a bad meal doesn’t mean that the whole country can’t cook. Perhaps your Americanized palate just can’t deal with je

Cherry, Rhubarb and Ginger Compote
Today was my sons kindergarten orientation. I think it goes without saying that I’ve been wondering how he got to this point already. He was just a baby not that long ago, after all! I have a feeling this feeling it will continue all summer until he actually goes to school. And then probably for […]

Buffalo Chicken and Potato Casserole
Here’s another all in one dinner option that’s being added to my regular rotation of meals. It’s everything you need for a complete dinner except a veggie. But an easy solution is to just add a side of steamed broccoli or a simple salad. This buffalo chicken and potato casserole is super spicy. If you’re not a fan of hot sauce or a lot of spice then this is not for you. It’s packing a […] Related posts: Bacon Barbecued Chicken Kebabs Cheesy Buffalo Chicken Dip

Texmex Sloppy Joes
Sloppy Joes had to be one of my favourite meals when I was a kid and I think that it probably had a lot to do with the name. I mean what kid could resist a meal where the name itself implies that not only is it going to be messy but that it is expected and thus ok! Although I like to play around with my sloppy joe recipe I had never really thought of doing a themed version so when I came across the idea of Texmex Sloppy Joes on Homesick Texan I knew that I would have to make them! Easiest way to cook Spaghetti Squash
I found the easiest way to cook spaghetti squash. I am totally into eating spaghetti squash, but it hasn’t always been that way. The first time I made spaghetti squash was twenty years ago, and I absolutely hated it didn’t like it! I didn’t care for the taste, and I really thought that it was very difficult to cut and too messy to clean. Truthfully, I never ate it again until a few weeks ago. Well, either my taste changed , spaghetti squash

Chicken Parmesan Bundles
I do try my best to get the veggies in our meal the best I can. If it’s not corn or beans, they don’t want it. So when I see something that calls for spinach, I know I have to find a way to incorporate it in such a way that they won’t either notice […]

Panzanella Salad w/ Grilled Chicken
A few weeks ago, my family and I ate at a local restaurant we enjoy and they had a great salad on their summer menu…my son ordered it and said it was delicious. Forward to last week, when I had several ripe tomatoes sitting on my counter needing to be used up…and so my version of the Lizard’s Panzanella salad with grilled chicken was born. This is a great light summer meal…super simple to prepare with fresh, healthy ingredients. Fresh, vine ripe tomatoes, crisp red on

Recipe for Asian Spinach Salad with Chicken, Mushrooms, Peppers, and Almonds
A main-dish spinach salad with chicken, mushrooms, peppers, and almonds. (Updated with step-by-step photos and an improved recipe, June 2012.) There are a lot of good reasons to eat spinach, whether or not you’re trying to lose weight. But when I am trying to eat mostly protein and vegetables, a big spinach salad like this is one of my favorite things to have for dinners. I made this on a day when I had some mushrooms in the fridge begging to be used, but they’re definitely
