Have you ever tasted something that forced you to change your whole way of thinking about a certain food?
Chef Mark Dym’s Famous Limoncello- Marinated Chicken Wings did that to me.
I don’t care for chicken wings, I know.. weird.. I don’t like hot sauce, wings are too messy, I try to avoid deep fat friend things… but Chef Mark Dym at Marco’s Coal Fired Pizza changed my mind.
Our waiter recommend them as a specialty and of course my husband loves wings so we ordered some. When they came to the table they were beautiful! No really, and the lemony fresh aroma that was wafting my way across the table made me reach over to try one.. WOW It’s not your typical sports bar wing.

Notes

YUM!

http://www.clumsygourmet.com/limoncello-marinated-chicken-wings/

Note: We made a batch of these for the Super Bowl game and they were a huge hit! We didn’t realize it but of course it’s a great gluten free option for any potluck party. We threw in 3 pounds of wings and 2 pounds of drumsticks which were actually cheaper than the wings were and they were just as succulent. Next project is to try this with chicken breasts which would be gluten free and low fat/low calorie/high protein.. the perfect combination!

Update: Added 1 drop of Lemon Essential Oil to the marinade for these wings and loved the extra kick!

Please let me know if you tried this and how it turned out for you.

HOW TO SMOOTHIE!

Everyone likes their smoothies a little different so the key is to keep playing with it until you find the way you like it. I add a cup of crushed ice to everything because I’m menopausal so always #Hawt! but you might like them less icy and more creamy smooth. It also depends on your blender as to how it works best. Some you need to blend the greens with the liquid first but in the Ninja, it works better to blend the greens in with the initial frozen items too. Don’t be afraid to play with your food!

FIRST OFF YOU NEED AN EXCELLENT BLENDER.

I chose a this Ninja for $99. The least expensive choice and mine is now about one year old and has withstood at least 200 smoothies along with lots of other tests and it works great. I also like the smaller smoothie sized pitcher. If I were to buy again I would probably get one of the options with the smaller blend and go tumblers here.
The Vitamix is always a favorite but a bit high priced for our budget.
The Simple Green Smoothie ladies prefer the Blentec. You can start using whatever one you have but these 3 will give you superior results when it comes to grinding those greens down where you can’t even tell you are drinking a salad.

GREAT VEGAN PROTEIN POWDER

To help lose weight (which I’m always trying to do) you need a boost of protein powder and I used to HATE it, it was so chalky and nasty tasting unless you got some with a ton of stuff that was bad for you. Recipes may or may NOT have it included but I normally add it. I have hunted and HUNTED and finally found this one. Garden of Eden Raw Protein. The regular formula comes in  Vanilla, Chocolate, Unflavored and Vanilla Chai. The weight loss version comes in Green Tea (which has no flavor at all) and . You can get it on Amazon subscription and save another 5%. This is cheaper than I find it at Whole Foods and Sprouts even with a coupon. I’m NOT a Vegan by any stretch of the imagination but it’s great for this use to not have any milk products for the Daniel Plan Cleanse and lots of other health plans.

  • Provides raw organic sprouted protein and live probiotics and enzymes
  • Excellent source of protein 17 grams and 33% daily value
  • Contains vitamin code raw food-created nutrients with their unique code
  • Suitable for vegetarian and vegan diets
  • Easily digested supports digestive health and function with live probiotics and protein-digesting enzymes

The Raw Fit comes in Green Tea (pretty much flavorless and great for my smoothies) and Marley Coffee.. sounds yummy but I haven’t tried it.

  • Support healthy blood sugar levels and burn fat naturally with the power of Svetol Green Coffee Bean Extract, RAW Food Created Chromium, Organic Cinnamon, and Organic Sprouted Grains
  • Help regulate your cortisol levels and manage stress related cravings with RAW Organic Ashwagandha
  • Build lean muscle mass, help repair it after work-outs and sustain it on a sensible meal plan with 28g of RAW certified organic plant protein–a complete protein with 13 organic sprouts and a biological value of 98.2%!
  • Naturally filling and satisfies hunger with RAW Organic Soluble and Insoluble Fiber from certified organic grains, seeds, legumes and fruits
  • Promotes healthy and comfortable digestion and elimination with live probiotics and enzymes
  • There are other varieties to check out here but these two have my endorsement.

ORGANIC FRUITS & VEGGIES

CHOSE A FEW RECIPES THAT LOOK GOOD TO YOU AND HIT THE ORGANIC SECTION OF THE STORE.

Costco has great deals on bags of frozen organic fruit and bags of Kale & Super Greens mix. Bananas are so inexpensive and pretty much make every smoothie taste wonderful. You never need to add any sweetener if you have a banana in your mix. You can use them either in their natural state or if they start to go a little too ripe, cut them into large chunks and freeze. Then put them into a ziplock bag to use throughout the week. Another tip we learned from Chopped Champion Jeremy Bringardener is to freeze chunks of cucumber in the same way and use them in your smoothies. This is the first green smoothie I ever tried and it pretty much changed my life. Lyfe Kitchen Banana Kale Smoothie Chef Bringardener demostrates his smoothie techniques in the video below. The sound is a little rough but we really enjoyed meeting him at the grand opening. Smoothies are also perfect for the Daniel Plan after your 10-day cleanse and even during the class you can modify the recipes. My friends that are getting into Essential Oils are also putting a few drops of those in their smoothies, I’ll let you know how that goes too.

This book “365 Vegan Smoothies” was very inspirational for me, it goes through lots of ideas for ingredients but also them split up into ‘Wellness Themes’ It’s only $8 on Amazon.. way less than I paid for it.

DIY Wool Dryer Balls

I fell in love with the idea of Wool Dryer Balls when my friends started talking about them. I hate putting chemicals in my families clothing and you know I have a very spoiled fur kid with skin issues so I always have to worry about that too. So of course I read all the posts about how to make dryer balls then head to Hobby Lobby and look for 100% wool yarn. Not as easy as you would think there was only 1 brand of yarn that were 100% wool and it wasn’t on sale, (sad panda) but I bought two skeins at $7.95 each and headed home. I crochet and have rolled my skeins into balls for years so this was easy if not a bit tedious and hand tiring endeavor but you can do it and watch TV… the wool was a little harder on my hands than the usual soft acrylics I’m used to working with but I got my 4 medium balls completed.

DIY Wool Dryer Balls Supplies

100% Wool Yarn

Panty hose (old one’s with runs would be perfect but if you stopped wearing them in the 90’s then get the cheapest ones you can find.)

A couple of tips from DIY Natural’s post are to watch out for any wool labeled “superwash” or “machine washable.” This type will NOT felt or if you are really thrifty or green and have an old wool sweater you can unravel the yarn from, use it or pick one up on your local Varagesale or Goodwill store.

String or acrylic yarn to secure the balls after you make them

Crochet Hook  (I prefer Susan Bates) or large needle to secure the ends of the yarn.

DIY Wool Dryer Ball Directions

  1. Take the yarn and wrap it around 3 fingers 8-12 times, pull it off your fingers and wrap the yard in the center of those loops several times.
  2. Double those loops over on themselves and then begin wrapping the ball as tight as possible going in all different directions. As soon as the ball is a little bigger than what you want the finished product to be.
  3. Cut the yard and use the crochet or the large needle to bury the end of the yarn deep inside the ball. Tie the ball securely with string or acrylic yarn as you don’t want that to felt with your ball.
  4. Continue this process until all of your yarn is used up or until you have all the balls you want.
  5. Take the first ball and put it in the end of the nylons and tie off that ball with the string, put in the second ball and so on until you have group that looks like the picture here.
  6. Put them in the hottest water wash possible and then dry them in the hottest dryer possible. Repeat this process until they are felted.

felted-wool-dryer-balls

Then to add that something extra to make your clothes and your laundry room smell amazing add a few drops of your favorite Essential Oil before you pop them in the dryer with your clothing.

wool-dryer-balls-diy

My favorites are Lavender and Purification (Click here to see how to get the oils for 27% off retail)

Lavender is fantastic for your sheets and pillowcases because we all know it’s the one we put in the diffuser at night to help with sleeping and snoring and Purification works wonders on hubby’s socks and workout clothes to rid everything of any odor.

Now for the EASY WAY.. because this took me a lot of time and several SEVERAL loads of washing and drying to get them felted. You can just buy them from ladies who are more skilled at it than you are.

I bought these and love them.

Several amazing artisans on Etsy make Felted Wool Dryer Balls too.

BaaBaa Black Sheep has some of the most unique Dryer Balls we’ve seen and can even do special orders to your specifications.

If you like brighter colors these would be the ticket. You could also assign an essential oil to a color so you could always have the right scent for the load of laundry you are drying.

bright colored wool yarn balls for the dryer

Why Do Felted Wool Balls Work?

We wondered this too so here is what we have learned. The Lanolin in the wool helps to soften the clothes and eliminates static and the action of the balls drys your load faster which also helps with static. They bounce around in your load to separate the layers in there and make your dryer much more efficient as well so you are using less electricity and it takes less time. You may have heard of using tennis balls to do something similar and I admit I have used them myself when drying large items but learned because of my dog that tennis balls have chemicals in the glue and will release into your dryer with heat and aren’t super great for your dog to chew on either. (We prefer Chews on Belay for our spoiled one)

According to DIY Natural

Another common cause of static in the laundry is over-drying. When items are completely dry and no moisture remains, this invites static electricity into the mix. Allow clothes to dry only until they’re not wet anymore – tumbling around for excessive amounts of time in the dry heat increases static and increases your energy costs.

If you have a cycle on your dryer that turns it off when the clothing are dry that is your best bet to beat the static. You can also dry your synthetic clothes in a load separate from your natural fibers.

What are the benefits of using wool balls in your dryer?

  • 100% wool dryer balls increase fluffiness and reduce static as dryer loads tumble.
  • Dryer balls help to soften clothes naturally.
  • They decrease drying time, saving you money on utility bills.
  • Fabric softeners and dryer sheets are filled with harmful chemicals and perfumes that coat your clothing, eventually ending up on your sensitive skin
  • Dryer sheets are costly and not great for the environment since they aren’t reusable
  • Wool dryer balls are safe to use on cloth diapers. No chemicals!
  • Dryer balls are made from a renewable resource.
  • If you have a spoiled pet whose beds get washed and dried regularly, wool dryer balls also help get more of the pet hair off of their beds and blankets.

Let me know if you have tried Wool Dryer Balls and if you made them yourself or decided to go the easy route and buy them already made and ready to go in our discussion on Facebook here.

I’ve had a crush on Margarita’s my whole life!

Ever since my parents used to let me sneak a taste of theirs at the local watering hole (GeJo’s) when I was in high school!  I thought maybe it was the forbidden fruit but 30 years later and I still LOVE Margarita’s. I  have gotten pickier through the years however.. I used to drink any margarita, $1 Marg night… I’m IN! But now I prefer real ingredients in my Margs.

Clumsy Gourmet’s Clean Margarita Recipe

best clean young living essential oils margarita recipe

MARGARITA INGREDIENTS

(Makes 2)

Directions:

  • margarita glassesCombine tequila, lime juice, Orange Liquor of choice (Cointreau or Triple Sec) and ice in the blender.
  • Blend until it is the way you like it.
  • Run cut limes around the Margarita glass and dip in salt or sugar. I have two of these rimmers one with salt and one with sugar
  • Pour Margaritas in glass
  • Add Essential Oils ( I didn’t want to lose any in the blender)
  • Stir in with pretty straws or these stainless steel ones that I love for my smoothies too.
  • DRINK UP!

If you’d like to make up the margarita mixer in advance, this is another option.

CLEAN MARGARITA MIXER

  • 1/2 cup fresh squeezed lime juice
  • 1/2 cup water
  • 2 tablespoons honey or agave syrup
  • 4 drops Young Living Orange, Lime or Citrus Fresh Essential Oils

SIMPLE SYRUP RECIPE

You have two options

  1. Quick & Easy – 1:1 Sugar and Water… Shake until completely dissolved. The superfine sugar you bought to use for a rimmer works great.
  2. On the Stove – 2 parts sugar to 1 part water…
  • Bring the water to a boil.
  • Dissolve the sugar into the boiling water, stirring constantly.
  • Once the sugar is dissolved completely, remove the pan from the heat. (Note: Do not allow the syrup to boil for too long or the syrup will be too thick once it cools.)
  • Allow to cool completely and thicken, then bottle and refrigerate if you aren’t using it right away.

Art trends are so interesting and along with the Adult Coloring Book Craze This Doodle idea has also become ridiculously popular but what do they all mean. It sort of sounds like a new language and it kinda is.

What is Zentangle?

Zentangle is an official trademarked name for specific “Tangles” that the creators and official CZT’s (Certified Zentangle Teachers) have created. You will see the name of the CZT or Rick Roberts and Maria Thomas the couple who are the creators of this new art trend. I really am attracted to these very detailed and organized designs but the whole idea behind Zentangle is the “ZEN” part of it.. to be able to relax and create something quickly and inexpensively that turns into a piece of art.

What I don’t like about it is all the RULES that seem to follow this trendy hobby. You are almost mandated that you really aren’t doing REAL Zentangle until you take a class from a CZT. You have to use a micron pen from Sakura, and you MUST purchase the official Zentangle tiles. The Zentangle “Kit” is $49 and contains 34 3.5 x 3.5 tiles, 2 Sakura pens, 2 pencils and a sharpener, a DVD and a card with several tiny patterns on it. You can buy just the official Zentangle tiles but those are .52 each plus shipping. That is pretty pricy since all you really need is a writing utensil and any blank piece of paper. Suggesting all these rules to be an official Zentangle rubs me the wrong way. There are several private groups on Facebook and many of them are delightful with lots of ideas and encouraging members to do their own thing and create, but others demand you only use official tangles on the 3.5 x 3.5 cards to be able to post there and no questions are to be asked or answered about the art. There is also a do not erase rule, a only black and white rule and you can only use official Zentangle patterns.

zentangle design by Sandy Batrholomew

Zentangle terminology is also very important to the strict CZT’s so you don’t call it doodling if you are using Zentangle Patterns, that’s Tangling.  If you are using any thing other than the official tile s and black pen and shading with a pencil then what you are creating is call Zentangle Inspired Art (ZIA) Rules are not where I find MY Zen. My suggestion is to hit Youtube for FREE and learn from the wonderful and talented CZT’s and non-CZT’s that are sharing how to do tangles.

Favorite YouTube Zentangle Resources

Ellen Wolten’s Video’s are really great and easy to follow.
Here is Heartrope which I was having a hard time figuring out.

A Little Lime is another favorite and you get to hear her Aussie accent (We Americans love that)

And there are a few on the Official Zentangle YouTube Channel here.
Maria teaches Betweed which is one of my very favorite tangle patterns.

Maria is an excellent instructor on these videos but there are only these 3 “OFFICIAL” ones.
Zentangle Mooka Video

AuraKnot Zentangle Video

The TanglePatterns.com page is a must visit as it has over 500 tangles with links to the “Step-Outs” for each Zentangle. A Step Out includes the step by step method to create the complex looking pattern. It’s comprehensive and very organized. Make sure you have an hour or two to browse. Linda Farmer, CZT has spent many hours linking up all this information.

Non-Official “Official” Zentangle Supplies

If you want to check out a few of the Zentangle tiles you can get this little starter pack sold by Sakura that has 5 tiles, 5 Microns, a Pencil for under $20. I’ve seen this at Hobby lobby for $19.99 so if you use your 40% off coupon that’s about the same price. CLICK HERE TO BUY

The Apprentice sized Zentangle tiles which measure 4.5 x 4.5 on Official site are $50 for 140 tiles on Amazon is under $30. Be warned though that these aren’t the exact same paper as the official 3.5 x 3.5 tiles AND they have writing on the back so if you like to tangle on both sides then you aren’t going to be able to. CLICK HERE TO BUY

You can also buy the Apprentice Kit for CZT’s to teach a class on Amazon for about half the price of the official website. Zentangle.com has it for $108.90 + shipping. Amazon has the same exact kit which includes: 1 instructional DVD, 26 Pigma pens, 26 pencils and 140 Zentangle tiles for $62.45 with free shipping. CLICK HERE TO BUY

Tools I have purchased and loved to be ZEN with my Zentangle Art

Micron Pens from Sakura.. I do LOVE these pens and have been using them since the 80’s when archival scrapbooking was first a “Thing”. They are relatively inexpensive with this 3 pack of Micron Pigma pens from Sakura for $6.63. CLICK HERE TO BUY

For Paper its perfectly fine to use any paper you have on hand. If you want to get a similar feel to the official paper then chose a watercolor paper. If you want to tangle on the 3.5 x 3.5 cards simply cut them yourself for a much more economical way to tangle on tiles. Personally I decided to tangle in a mixed media journaling type of art paper book. They even come in tan or grey paper or even black paper where you use white  or gel pens to tangle with (again this is a no no to official Zentanglers but it’s really gorgeous! Check out my latest Zentangle Pinterest Board.

Follow Chrissy Morin’s board Zentangle in Color on Pinterest.

Your options for ways to color your Zentangles and Doodles is pretty much unlimited.. The difference in price an quality will show up with whether or not the markers smear easily and how bright and vibrant the colors all. Again the Sakura Gelly Roll pens have been favorites for years and years.. not just since doodling and Zentangles arrived on the scene.

Gelly Roll Pens I Love

Sakura 6-Piece Gelly Roll Assorted Colors Stardust Meteor Pen Set This Gelly roll stardust meteor set is gorgeous! Colors included are: silver, marine, copper, pink, green and blue.

Sakura 10-Piece Gelly Roll  Moonlight Gel Ink Pen Set – Fluorescent Moonlight colors are not fade-resistant, but no smears, feathers, or bleed-through on most papers. Best effects on black paper and can be used on white paper. I haven’t played with these very much since I tend to use white paper but they are on my next thing to try list.  CLICK HERE TO BUY

Sakura 10-Piece Gelly Roll Metallic Gel Ink Pen Set – LOVE love these pens It’s really hard for me to decide if I like the glitter pens (aka Stardust) or these metallic ones best. Metallic colors include: silver, copper, blue, red, green, purple, pink, emerald and 2 golds.

Sakura Souffle 10-piece Gelly Roll Gel Ink Pen Set –Souffle dries lighter and pastel than when you first draw it on. The Souffle looks fabulous on darker papers or on top of darker inks or paint.  The set consists of-Yellow, Orange, Green, Pink, Purple, Light green, Light orange, Blue, Gray and White. Joanne Fink is a big fan of Sakura. Find her on Youtube for demos of all of the products. CLICK HERE TO BUY

If you already know you are going to want everything then you can splurge on this jumbo pack of Sakura Jelly Roll pens that have all the glitters, metallics, golds, silvers and moonlights as part of the pack. The problem with these packs are the large number of gold and silvers. I use those only for accents but this pack has a TON so you might be better off with just getting exactly what you want in the smaller packs. I DO really like that storage case though… looking to see if I can find one that is similar. CLICK HERE TO BUY

Koi Coloring Brush Markers – This is a 12 color set for $20.12 on Amazon.. not bad per marker price. These work just like watercolors so you can get really pretty and blended effects in your coloring and Zenspirations and Zentangle Inspired designs. CLICK HERE TO BUY

Koi Watercolors – I just bought this set so I haven’t gotten to play with it yet but I loved that it comes with a medium water brush. Just that brush costs $8 so I thought this was a great value and I can’t wait to play.

Sakura 24-Piece Koi Assorted Water Colors Field Sketch Set with Brush –  This Koi kit is a Portable field sketch kit for use on the go or at home and it includes brush, sponge, built-in palette, 24 mini watercolor cakes, plastic case with a  refillable koi water brush to transport and store water.

Maybe it’s just because I grew up coloring my folders with these pens but I’m still  a big fan of Flair pens. On Amazon check all the different packs for the best price that day, this seems to vary WIDELY. CLICK HERE TO BUY

Zentangle Paper

Where should you Tangle your Zen? The only place to get the official 3.5 x 3.5 Zentangle Cards is on the Zentangle.com website at .52 per card + shipping. ( I did just order some so I could say I truthfully if they are any better or worse than cutting your own at a fraction of the price)

I prefer working in an Art Journal so I can see my progress and refer to step-outs I’ve done of some of my favorite Tangles. This one is my favorite and I save it for when I really want to get my Zen on I love the Strathmore Visual Journal. It is Spiral Bound 5.5 x 8 and it’s a Mixed Media Vellum paper. With this smaller size I can tuck it into my bag, take along a couple pens and be able to Doodle anywhere.

My Favorite Zentangle Books (So Far)

I checked out every Zentangle book my library had available and also purchased a couple.

I really like Sandy Bartholomew’s books the best. They might not be the best first Zentangle book to buy but they are very entertaining and PACKED with images, techniques and tips. They are smaller than you might expect but every page is used to the fullest. The two I’ve purchased are

TOTALLY TANGLED Zentangle & Beyond – This book isn’t for the newest beginner. First I would visit lots of the Zentangle Video instructions I listed above for free, buy some pens and paper and play for awhile. but Sandy’s books take you to a new place with LOADS of ideas to take your tangles off of those tiny cards and onto things like her bathroom floor and cute dolls. She’s a mixed media artist so for her the mixing of tangles and art and fun drawings is much more in line with my idea of ART and ZEN.

YOGA for your BRAIN also by Sandy Steen Bartholomew teaches even more tangles around 60 in this book with a handy reference guide in the back. She also does a wonderful job of teaching shading to the untrained artist. She even has a section on Rock Zen Doodling   CLICK HERE TO BUY

High on the list would be the “One Zentangle a Day: A 6 Week Course in Creative Drawing” by Beckah Krahula CLICK HERE TO BUY. Beckah give you lots of background about Zentangle and art in general and then has step outs for 2-4 tangles a day and then practice ideas after you learn the tangles of the day.

JOY OF ZENTANGLE – as a newbie to Zentangling I really enjoyed this book. There are a ton of tangles to learn with great step outs for them. This book was the one that started to irritate me with all of the rules and talk about copyrights of the tangles etc. but I enjoyed the instruction and just ignored the ads that declared you HAD to buy the kit and take a class to REALLY Zentangle.. Ridiculous!

You can purchase several official small Zentangle kits on Amazon

ATC Zentangle Pack – ATC stands for Artist Trading Cards so this set has 1 Black Micron 01, 03, 05; 1 Black Graphite Pencil, 1 Tortillion and 5 3.5″ x 2.5″ White Tiles
The Rennaisance Zentangle Pack $13.99 ($19.99 on Zentangle.com)
The Mendala Zentangle Pack – $15.07 ($19.99 on Zentangle.com) Sometimes called Zendala’s this is Zentangle done on a circular tile.
The Black Zentangle Set – This set contains: 2 each Gelly roll white; 1 each Pigma Micron 08 black; 1 each white pencil; 1 each tortillion; 5  black Zentangle 3.5″ tiles. $13.35 ($15.95 on Z)

Cozy Up This Winter with a Warm “Hug in a Mug”

I was just talking to a friend about home much my girls love marshmallows and marshmallow fluff but how horrible it has got to be for you… who even KNOWS what is in those little crunchy things that come in instant cocoa?

Then McCormick Kitchens sent this information about the “hug in a mug” -themed desserts perfect for coming together after a day outside in a winter wonderland.

Cold Days Call for Hot Chocolate

Instead of heading to Starbucks on those frozen snow days, stay home and make your own version of your favorite drink in your special snowman mugs instead.  Add new flavor variations to a traditional chocolaty base or to your latte’ to elevate your cup of comfort.

Vanilla Cinnamon Hot Cocoa

Add 1/2 tsp of vanilla extract + a pinch of cinnamon or a drop of Cinnamon Essential Oil to a mug of cocoa

“What I love about these desserts is that they’re fun and easy to make, whether you’re whipping up a quick snack for the kids or treating yourself by cozying up on the couch with a little indulgence,” said Mary Beth Harrington of the McCormick Kitchens. “A ‘hug in a mug’ can come in many forms, from cookies and cakes to hot drinks topped with homemade marshmallows or flavored whipped cream. Whichever you choose, these sweet, individual delights will chase your winter blues away.”

What I loved was that I could decide for myself just how much of what went into my marshmallows and my hot cocoa or latte’.

Pumpkin Pie Spiced Hot Chocolate with Coconut Milk

Serves 4: Serving Size: 1/2 cup

Pumpkin Pie Spice Recipe

  • 3 tablespoons ground cinnamon ( or 2 drops of cinnamon essential oil)
  • 2 teaspoons ground ginger (1 drop of ginger essential oil)
  • 2 teaspoons ground nutmeg
  • 1 ½ teaspoons ground allspice
  • 1 ½ teaspoons ground cloves (1 drop of clove essential oil)

Mix the spices together in a small bowl and take a little whiff. (Smells like heaven, right?) If one of those doesn’t make you happy skip it and you’ll have your own custom blend. I leave out the allspice & cloves because I never use those either. Store the mixture in a clean small jar or spice container.

Heat coconut milk and water in small saucepan until hot (not boiling). Remove from heat.
Stir in hot cocoa mix and pumpkin pie spice until dissolved. Serve immediately. Top with whipped cream, if desired.

Peppermint Mocha

Cocoa Recipe above (or instant) – Add 1 drop per cup of Peppermint Young Living Essential Oils. Top with the Homemade Peppermint Marshmallows below.. YUM YUM!

Mexican Hot Chocolate (serves 4)

Serving Size: 1 cup

Directions:

  1. Place milk, cinnamon stick, vanilla bean and ancho chile pepper in medium saucepan.
  2. Bring just to boil on medium heat. Remove from heat. Remove cinnamon stick and vanilla bean.
  3. Stir in chocolates and sugar with wire whisk until melted and mixture is slightly frothy.
  4. Serve with whipped cream and grated chocolate, if desired.

Red Velvet Hot Chocolate (serves 4)

  • 4 cups whole milk*
  • 1/4 cup granulated sugar
  • 10 ounces semi-sweet baking chocolate, coarsely chopped
  • 2 teaspoons McCormick® Red Food Color
  • 1 teaspoon McCormick® Pure vanilla extract

Vanilla Whipped Cream for on top:

  • 1/2 cup heavy cream
  • 2 tablespoons confectioners’ sugar
  • 1/2 teaspoon McCormick® Pure vanilla extract

Directions:

  1. For the Hot Chocolate, place milk and granulated sugar in medium saucepan. Bring to simmer on medium heat, stirring to dissolve sugar.
  2. Remove from heat. Stir in chocolate with wire whisk until melted. Stir in food color and vanilla. Pour into serving cups. Serve with marshmallows and Vanilla Whipped Cream, if desired.
  3. For the Vanilla Whipped Cream, beat heavy cream, confectioners’ sugar and vanilla in medium bowl with electric mixer on high speed until stiff peaks form.

Don’t forget the whipped cream! Add an extra helping of flavor to hot desserts and beverages with a dollop of Vanilla or Candy Cane whipped cream. Skip the spoon and use McCormick Cinnamon Sticks as a stirrer – they’re the perfect length for mugs.

*Non-fat Milk, Soy Milk or Almond Milk can be substituted for whole milk.

Homemade Marshmallows

Add a little extra something to your warm beverage with flavorful homemade marshmallows. For a fun, kid-friendly snow day activity, check out McCormick’s Easy Marshmallows Guide to create pillowy homemade marshmallows in flavors. It will have to be a special occasion to make these ooey gooey treats but it will be worth it when you taste them!

Peppermint Homemade Marshmallows

Makes 24 Marshmallows

  1. Spray 9-inch square baking dish with no stick cooking spray then coat with some of the confectioners’ sugar. Set aside. Microwave 1/2 cup of the water, granulated sugar and corn syrup in medium microwavable bowl on HIGH 7 minutes. Stir to dissolve sugar. Microwave on HIGH 5 minutes longer. (Mixture will have a slight yellow tint.) Carefully remove hot bowl from microwave.
  2. Meanwhile, place remaining 1/2 cup water in mixer bowl. Sprinkle with gelatin. Let stand 5 minutes. Gradually beat in hot syrup mixture with whisk attachment on medium-low speed. Beat 8 minutes. Increase speed to medium-high. Beat 10 to 12 minutes longer or until mixture is fluffy, shiny and at least tripled in volume. Beat in extracts.
  3. Spread marshmallow mixture in prepared pan. Smooth top with a spatula. Immediately drop food color over top; swirl with toothpick. Sift about 2 tablespoons of the confectioners’ sugar over top. Let stand at room temperature overnight or refrigerate at least 3 hours.
  4. Place remaining confectioners’ sugar in large bowl. Cut marshmallows into 1 1/2-inch squares. Add marshmallows in batches to confectioners’ sugar; toss to coat well. Shake off excess. Store marshmallows in airtight container at room temperature up to 3 days.

This Very Vanilla Marshmallow Recipe is a little simpler and would go with any of your favorite hot cocoa recipes.

There “Sweet Treats in a Mug” to match the hot cocoa treats above look so yummy!

These handheld desserts can be made in the oven or microwave and tailored to please every palate. Simply add peppermint or raspberry extract to transform a fudgy brownie base or choose favorite candy pieces to personalize an oven-baked blondie flavored with cinnamon and vanilla extract. Make these extra special treats to enjoy on Valentine’s Day, or any other day this winter.

My next door neighbor Jane used to make up huge platters of yummies on the holidays and then bring it to our house….and these things are just totally addictive and relatively easy to make

Mock Salted Caramel Toffee with Chocolate

Made with crackers, home made toffee, nuts and chocolate. I’ve also seen this called “Christmas Crack” when it’s made with saltine crackers.

janes mock toffee sugar butter boiling photo

Pin this Mock Salted Caramel Toffee to your Holiday Baking Pinterest Board.

INGREDIENTS

DIRECTIONS

  1. Line a high sided cookie sheet or shallow 9 x 13 inch baking dish with foil or parchment paper(cleanup easier).
  2. Preheat oven to 350F.
  3. Bring the butter and brown sugar to a boil in a saucepan and simmer it for about 5 minutes until it’s a rolling boil and starts to turn into a magical toffee color. It’s very important to pay attention at this point.. Things star moving quickly and this can easily burn. If you are prone to “SQUIRREL” moments like I am.. set a timer, have a kitchen helper to stir and watch this pot of bubbling sugar..
  4. Put a layer of crackers or square pretzels on the cookie sheet, close together.
  5. Pour the brown sugar mixture over the crackers and bake for about 6-10 minutes – Check early, you don’t want it to burn. ( it should be bubbly)
  6. Remove and immediately pour the chocolate chips over the crackers, evenly distributing them. Let it sit a minute and then spread the chocolate across the mixture with the spatula gently so as not to disturb the crackers underneath. Let it sit for another 30 seconds and at this point it pretty much spreads like frosting.
  7. Grind some good quality Alder Smoked Salt while it’s nice and gooey. I’m currently obsessed with Salted Caramel anything.
  8. Add toffee bits and / or other optional ingredients below.
  9. After that you can top with whatever you like…. options are listed below
  10. Let harden and then break up into random size and shape pieces (If you are in a hurry put it in the freezer)

My favorite is just some chopped walnuts, but you can also try dark chocolate with candy cane bits, white chocolate with dried cherries, rocky road, m&m’s…just about every combo you can think of.  Put it in the refrigerator to let it set up… then break apart into toffee shaped pieces.  I’ve seen recipes using other types of crackers too, but the graham crackers are my favorite.

This makes a big batch.. but it won’t last long!

Place it on a beautiful cookie plate for your cookie exchange, or on festival paper plates or neat Christmas boxes to share with your friends and neighbors.
